Cold and hot smoking: differences and uses

The difference between cold and hot smoking lies in how smoke exposure is combined with heat. Cold smoking is done without reaching cooking temperatures; in hot smoking, the smoking process can be part of the cooking. The name of the method does not replace the preparation and storage instructions for each product.

Cold smoking

The food is exposed to smoke at temperatures that do not cook it. This process adds a smoky character, but it should not be considered in itself a treatment that eliminates microorganisms that can cause illness.

Hot smoking

When smoke exposure takes place at cooking temperatures, we refer to it as hot smoking. The result depends on the food and the complete process. A generic smoker temperature is not enough to decide how any product should be consumed.

The NCCEH technical guide on ready-to-eat meats, in its smoking section, develops this distinction. This page explains the concepts; it is not a procedure for smoking food at home.

Choosing a smoked product by its culinary use

When buying, in addition to the process, presentation, flavor, and the dish you want to prepare are important. These catalog options allow you to compare uses without attributing a specific method based solely on the name:

  • 200g smoked butter: for bread, vegetables, pasta, or meat dishes. Check the 1kg format if you use it more frequently.
  • 100g sliced pastrami: for a sandwich or appetizer. You can compare with 500g or a whole piece depending on the quantity and cut you prefer.
  • Smoked piparras: a pickled accompaniment for tapas or a charcuterie board. Check the drained weight on its product page.

Can it be eaten directly?

Consult the preparation indicated for the specific product. Do not assume it is ready to eat just because it is called smoked.

Does it keep the same as any other smoked product?

Do not use a common rule for the entire catalog. Follow the storage and consumption after opening instructions indicated on the product page and packaging of each product.

If you want to choose by dish and format, continue to the smoked products guide. To prepare a dish, check out the Rooftop recipes.
